Nuts

     The Nuts from Amos Miller’s Organic Farm are prepared using the method suggested by the Weston A Price Foundation and Sally Fallon author of Nourishing Traditions. Nuts are first soaked in salt water (brine) and then dried at a temperature of no more than more than 150 degrees Fahrenheit or 65 degrees Celsius. This method, which imitates the Aztec practice of first soaking and then sun-drying, activates enzymes that neutralize enzyme inhibitors making the nuts easier to digest and their nutrients more readily available.
